Ben'S Mom'S Spanish Rice - cooking recipe

Ingredients
    2 cloves garlic, chopped
    1/4 c. finely chopped onions
    2 c. uncooked rice
    2 tsp. salt
    3 Tbsp. vegetable oil
    1 can tomato sauce
    4 c. water or chicken broth
    1 c. cooked, cubed chicken (optional)
    1 c. peas and carrots (optional)
Preparation
    Pour oil in a large skillet pan over medium heat. Saute garlic, onions and salt until slightly browned.
    Add rice; continue to saute until rice is slightly browned.
    Remove from heat; add 1 can tomato sauce and water or broth.
    If desired, add in optional ingredients at this time. Bring to a boil over high heat.
    Lower flame, cover and simmer about 20 minutes or until water is absorbed.
