Barbara Devery'S Tex Mex Potatoes - cooking recipe

Ingredients
    7 baking potatoes, peeled and cut into chunks
    4 slices cooked and cut up bacon
    1 large red onion, peeled and sliced
    1 stick butter, melted
    2 jalapeno peppers, chopped
    12 oz. shredded Cheddar cheese
    12 oz. shredded Monterey Jack cheese
    4 cloves diced garlic
Preparation
    Place potatoes in baking pan with melted butter, onion and garlic.
    Cook in 400\u00b0 oven for 35 minutes.
    Then add remaining ingredients and cover with aluminum foil.
    Cook 25 minutes longer. Stir and cook 10 minutes longer, uncovered.
    Salt and pepper to taste before or after cooking.
