Zucchini Cake - cooking recipe
Ingredients

3 eggs, beaten
2 c. sugar
1 c. oil
2 c. grated zucchini
1 Tbsp. vanilla
3 c. flour
1 tsp. salt
1 tsp. soda
1/4 tsp. baking powder
2 tsp. cinnamon
1/2 tsp. allspice
1/4 tsp. nutmeg
1/4 tsp. cloves
1 c. walnuts
1 c. raisins
2 c. crushed pineapple, drained
Preparation

Beat the first 5 ingredients in large mixing bowl.
Sift or stir next 8 ingredients; mix into batter.
Stir in nuts, raisins and pineapple.
Pour into greased and floured pans.
Bake for 1 hour, or until tester comes out clean.
If using a 13 x 9-inch pan, you will have enough batter for 1 or 2 loaf pans for bread.
