Creamy Sweet Potatoes - cooking recipe

Ingredients
    5 lb. sweet potatoes, peeled and cooked
    4 eggs, lightly beaten
    1/2 c. orange juice
    1/2 c. butter or margarine, softened
    1/2 c. sugar
    1 tsp. vanilla extract
    1/2 tsp. ground nutmeg
    dash of salt
    miniature marshmallows
Preparation
    In a large bowl, mash sweet potatoes.
    Add eggs, orange juice, butter, sugar, vanilla, nutmeg and salt; mix well.
    Transfer to a greased 3-quart baking dish.
    Bake at 350\u00b0 for 35 to 40 minutes or until set.
    Top with marshmallows.
    Return to oven until they just begin to puff and melt, about 5 to 10 minutes.
    Yield:
    10 to 12 servings.
