Pear Butter - cooking recipe

Ingredients
    4 qt. pear pulp
    8 c. sugar
    2 tsp. grated orange rind
    1 c. orange juice
    1 tsp. ground nutmeg
Preparation
    Cut pears in 1/4s;
    take
    out
    seeds and cook for a few minutes.
    Mash with
    masher,
    then put through food mill.
    Mix with other ingredients
    and
    cook
    until soft and thick.
    Stir carefully.\tPour into 8 pint jars and process 10 minutes.
