Four C. Salad - cooking recipe

Ingredients
    2 skinless, boneless chicken breasts (approximately 1 1/4 lb.)
    3 Tbsp. mayonnaise
    1/2 c. celery, diced
    juice of 1 lemon
    about 1 Tbsp. soy sauce
    about 1 tsp. curry powder
    1/2 c. cashews
Preparation
    Poach chicken breasts.
    Cut into bite sized pieces.
    Mix mayonnaise, lemon juice, soy sauce and curry powder.
    Add chicken and celery, chill.
    Just before serving, add cashews and more dressing ingredients to suit taste and consistency.
    Serve on lettuce.
    Serves 4.
