Gnocchi - cooking recipe

Ingredients
    2 lb. 3 oz. old floury potatoes
    salt
    9 oz. flour
    1 egg
    1/4 lb. grated Parmesan
    2 oz. butter
    pepper
Preparation
    Peel the potatoes and boil them in salted water.
    When they are thoroughly cooked, puree them, then while they are still hot, incorporate the flour and lightly beaten egg until a smooth paste is obtained.
    Leave them for 30 minutes.
