Dilled Pork Scallopini - cooking recipe
Ingredients

1 (1 lb.) pork tenderloin
all-purpose flour
1 egg
1 Tbsp. water
1/2 c. seasoned dry bread crumbs
2 Tbsp. butter
1 medium carrot, diced
1 jar (12 oz.) homestyle brown gravy
3 Tbsp. half and half or milk
1 tsp. lemon juice
1/2 tsp. dill weed
1 Tbsp. dairy sour cream
Preparation

Cut pork crosswise into 12 slices.
Flatten to 1/4 inch thickness.
Dust pork lightly with flour.
Combine egg and water. Dip pork into egg mixture, then coat with crumbs.
In large skillet, saute pork in butter, a few pieces at a time, about 3 minutes per side.
Add more butter if necessary.
Keep pork slices warm.
