Carrot Salad - cooking recipe

Ingredients
    1 lb. carrots, peeled and sliced
    salt and pepper to taste
    1 clove garlic, minced
    2 lemons, juiced
    1 tsp. cumin
    1/2 tsp. paprika
    1/4 c. oil
    1/2 c. minced parsley
Preparation
    Place carrots in a saucepan with enough cold water to cover. Add salt and bring to a boil.
    Simmer, uncovered, until tender, about 15 to 20 minutes.
    Drain.
