Partridge Pie With Oysters - cooking recipe

Ingredients
    4 partridges
    1 pt. oysters and liquor
    1/2 c. green onions, chopped
    1/2 c. chopped celery
    1 1/2 sticks butter
    6 Tbsp. flour
    1 c. heavy cream
    2 Tbsp. sherry
    salt and white pepper
    1/4 tsp. tarragon
    1/2 tsp. nutmeg
    1 Tbsp. lemon juice
    1 tsp. grated lemon rind
    pie crust dough
    1 egg, beaten
Preparation
    In a stew pot, cover partridges with water and stew over low heat until tender (about 30 minutes).
    Remove partridges and reserve broth.
    Drain oysters and save liquor.
