Zucchini And Bell Pepper Frittata - cooking recipe

Ingredients
    1/2 c. chopped onion
    1/2 c. chopped red bell pepper
    1 1/2 Tbsp. olive oil
    2/3 c. fresh grated Parmesan
    2 Tbsp. minced fresh parsley
    1 c. thinly sliced zucchini
    1/2 chopped green pepper
    4 large eggs
Preparation
    In
    9-inch skillet, cook onion, zucchini and peppers in little oil.
    Salt and pepper
    to\ttaste.\tIn
    a
    bowl,
    whisk together eggs, 1/3 cup
    Parmesan
    and parsley.
    Add vegetables to mixture. In the skillet,
    heat remaining oil.
    Pour in egg mixture, distributing vegetables
    evenly,
    and
    cook
    Frittata without stirring until edge
    is set and center soft.
    Sprinkle remaining Parmesan over top.\tPut
    under broiler 4-inches from heat until cheese is
    golden.\tCool.
    Slide
    out
    onto serving plate.\tCut in wedges.
    Serves 2.
