Italian Soup - cooking recipe
Ingredients

1 medium onion
1 large carrot
1 rib celery
8 oz. mild Italian sausage (salsiccia)
1 Tbsp. butter
1 medium zucchini
1/3 c. uncooked broken spaghetti pieces
4 c. rich chicken broth
1/2 tsp. oregano
1 (28 oz.) can peeled tomatoes
salt to taste
grated Parmesan cheese
Preparation

Clean and chop into small pieces the onion, carrot and celery. Put vegetables into 3 1/2-quart saucepan.
Remove sausage from casing and break into small pieces.
Add meat and butter to saucepan with vegetables.
Set saucepan over medium heat; cook ingredients until sausage loses all red color, about 5 minutes. Add chicken broth, chopped, cleaned zucchini, spaghetti pieces and oregano to saucepan.
Add can of tomatoes, breaking the tomatoes apart with your hand.
Cook, stirring gently once or twice, until spaghetti and veggies are cooked (20 to 30 minutes).
Serve with Parmesan cheese grated on top.
