Red And Green Cabbage Slaw - cooking recipe

Ingredients
    2 1/2 c. red cabbage, thinly sliced
    2 1/2 c. green cabbage, thinly sliced
    1/2 c. yellow or red bell pepper, chopped
    1/2 c. carrots, chopped
    1/3 c. red onion, chopped
    1 (8-oz) reduced fat Cheddar cheese, cubed
    1/2 c. mayonnaise, fat free
    1 Tbsp. red wine vinegar
    2 1/2 tsp.\tEqual for Recipes or 8 packets Equal sweetener
    1/4 tsp. celery seed
    Salt and Pepper to taste
    Lettuce leaves (optional)
Preparation
    Combine vegetables and cheese in bowl.\tMix mayonnaise, vinegar, Equal and celery seed; stir into cabbage mixture.\tSeason to taste with salt and pepper.
    Spoon mixture onto lettuce lined plates, if desired.
    Serves 8.
