Zucchini Stuffing Casserole - cooking recipe
Ingredients

4 medium zucchini or 4 c. sliced (unpeeled)
3/4 c. shredded carrots
1/2 c. chopped onions
2 1/2 c. seasoned bread crumbs (stuffing)
1/2 c. sour cream or 1 can cream of chicken soup
Preparation

Cook zucchini in a little water until tender.
Cook carrots and onions in skillet in small amount of margarine until tender. Stir in stuffing crumbs and add soup or sour cream.
Fold in drained zucchini.
Put in casserole.
May top with more croutons. Bake 30 to 40 minutes.
