Arroz Con Pollo Pronto - cooking recipe

Ingredients
    3 lb. chicken, cut up
    1 1/2 c. chopped onion
    1 (7 oz.) pkg. yellow rice mix and seasoning
    1 c. green peas
    1 (4 oz.) jar pimentos, drained and cut into strips
Preparation
    Brown chicken 5 minutes per side until golden; remove chicken from pan. Add onion and cook 5 minutes until golden. Add rice and 2 cups water and seasoning package.
    Place chicken pieces, skin side up, on top of rice. Bring to a boil; cover and reduce heat. Cover and cook 15 minutes; stir in peas. Cover and simmer 5 minutes until liquid is absorbed.
