Potato Soup - cooking recipe

Ingredients
    1 large onion, chopped
    1/2 c. fresh mushrooms, sliced
    1 Tbsp. olive oil
    3 large potatoes, peeled and sliced (about 4 c.)
    1 large can beef broth (14 1/2 oz.)
    1 large can chicken broth (14 1/2 oz.)
    1/2 c. buttermilk
    1 Tbsp. cornstarch
    1 Tbsp. fresh basil, chopped or 1 tsp. dried
    1/4 c. Canadian bacon, chopped (about 2 slices)
    1/4 c. plain low-fat yogurt (optional)
Preparation
    In deep saucepan, cook onion and mushrooms in hot oil until tender and lightly browned.
    Add potatoes, beef and chicken broth; bring to a boil, reduce heat and cover.
    Simmer 35 to 45 minutes until potatoes are tender.
