Chicken Broth - cooking recipe

Ingredients
    1 stewing chicken, cut in large pieces (neck and giblets included)
    2 qt. cold water
    2 onions, stuck with several whole cloves
    3 to 4 celery stalks (including leaves), cut in pieces
    3 to 4 carrots, scraped and cut in pieces
    1 large bay leaf
    several whole peppercorns (if desired)
Preparation
    Wash chicken and pat dry; put in soup kettle and cover with 2 quarts of water.
    Bring to a boil.
    Skim foam and lower heat. Cover kettle and simmer for 2 hours.
    Add onions, celery, carrots and bay leaf.
    Simmer an additional hour, skimming foam as necessary.
    Remove from heat and cool.
