Fresh Peach Tapioca - cooking recipe

Ingredients
    4 c. fresh, diced peaches
    3/4 c. brown sugar
    1/4 c. Minute tapioca
    3/4 c. water
    1 tsp. cinnamon
Preparation
    Mix ingredients in 4-quart saucepan.
    Let stand for 5 minutes. Cook as pudding until thickened.
    Pour into serving dishes. Cool.
    Top with ice cream or Cool Whip, if desired.
    Serves 4 to 6.
