Ingredients

2 c. flour
2 tsp. baking powder
1/2 tsp. salt
2/3 c. shortening
1 1/2 c. sugar
1/2 tsp. vanilla
1/2 tsp. almond extract
1 egg
3/4 c. drained pineapple
1/2 c. chopped coconut
Preparation

Cream shortening, sugar and extracts.
Beat in egg until fluffy.
Add pineapple and dry ingredients.
Drop by teaspoonfuls on ungreased cookie sheet 3-inches apart.
Sprinkle with coconut and then bake at 325\u00b0 for about 20 minutes.
