Chunky Potato Soup - cooking recipe

Ingredients
    3 Tbsp. margarine
    1/4 c. all-purpose flour
    4 c. milk
    2 c. diced potatoes
    1/2 c. finely minced onion
    1/2 to 3/4 tsp. salt
    1/4 to 1/2 tsp. pepper
Preparation
    Melt butter or margarine in heavy pan.
    Add flour to make a light roux, cooking approximately 1 minute (don't overcook). Gradually add milk, stir in potatoes, onion, salt and pepper. Cook over medium heat, stirring frequently (don't let mixture scorch) until mixture is thickened and potatoes are done.
    Serve warm.
    Makes 5 cups.
    Can be doubled.
