Eggplant Appetizer - cooking recipe

Ingredients
    1 eggplant, peeled and cut into fingers
    1 pkg. Egg Beaters (fat-free eggs)
    seasoned bread crumbs
Preparation
    Dip eggplant fingers into Egg Beater liquid and then into crumbs.
    Make sure they are covered on all sides.
    Line up on ungreased pans and bake at 350\u00b0 for 30 minutes or until tender.
