Fettucine And Veggies - cooking recipe

Ingredients
    1 c. sliced mushrooms
    1 clove garlic, minced
    4 tsp. diet margarine
    1 c. cooked broccoli, zucchini or asparagus
    1/4 c. part-skim Ricotta cheese
    1 1/2 oz. grated Parmesan cheese
    2 c. cooked fettucine or noodles
    2 Tbsp. chopped parsley
    1 egg
Preparation
    Saute mushrooms and garlic in margarine.
    Stir in vegetables of your choice.
    Set aside.
    In blender, blend egg and Ricotta cheese. Add milk and Parmesan cheese.
    Blend well.
    Add egg mixture to vegetable mixture.
    Simmer 2 minutes.
    Toss with cooked fettucine. Sprinkle with parsley.
    Serves 4.
