Low-Fat Carrot Cake(Yields 12 Servings) - cooking recipe

Ingredients
    1/3 c. boiling water
    2 c. finely shredded carrots
    2 c. whole wheat flour
    1/2 c. molasses
    1/2 c. sugar or honey
    1 1/2 tsp. baking soda
    1/4 tsp. salt
    1 tsp. ground cinnamon
    1 tsp. ground nutmeg
    1 tsp. ground cloves
    1/2 c. applesauce
    1 Tbsp. oil
    3 egg whites
    1 tsp. vanilla
Preparation
    Combine carrots with boiling water.
    Let stand.
    Combine dry ingredients; set aside.
    Beat egg whites, oil, applesauce, vanilla and molasses and/or honey.
    Add dry ingredients.
    Beat on low speed for 1 minute; medium speed for 2 minutes.
    Bake 45 to 50 minutes at 350\u00b0.
    Frost with cream cheese and coconut frosting.
