Cream Cheese Cake(Italian) - cooking recipe

1 stick butter or oleo
2 c. sugar
2 c. sifted flour
1 tsp. baking soda
1 1/2 c. chopped pecans
1/2 c. shortening
5 eggs, separated
1 c. buttermilk
1 tsp. vanilla
3 oz. coconut flakes
Preparation

Beat egg whites and set aside. Cream the butter or oleo and shortening. Add sugar and beat until smooth. Add egg yolks. Combine flour and soda.
Add flour mixture alternately with buttermilk, starting with flour and ending with flour. Stir in vanilla, coconut and pecans. Fold in egg whites. Bake at 350\u00b0 for 40 to 45 minutes. Check at 35 minutes.
Makes 3 round 9-inch layers.
