Quick Chicken Enchiladas - cooking recipe

Ingredients
    1 small onion, chopped
    2 Tbsp. butter
    2 c. shredded, cooked chicken
    1 c. picante sauce
    sprinkle of ground cumin
    2 c. shredded Monterey Jack cheese
    8 flour tortillas
    green onions and tomatoes (optional)
    dairy sour cream (optional)
Preparation
    Cook onion and butter until tender, but not brown.
    Stir in chicken, 1/2 cup of picante sauce and cumin.
    Heat through. Remove from heat; stir in 1 cup of the cheese.
