Spaghetti Squash Casserole - cooking recipe

Ingredients
    1 small (1 1/2 to 2 lb.) spaghetti squash
    1/2 c. water
    1 lb. ground beef
    1/2 c. chopped onion
    1/2 c. chopped sweet red pepper
    1 garlic clove, minced
    1 (8 oz.) can tomatoes with liquid, cut up
    1/2 tsp. dried oregano
    1/4 tsp. salt
    1/8 tsp. pepper
    1 c. (4 oz.) shredded Mozzarella or Cheddar cheese
    1 Tbsp. chopped fresh parsley
Preparation
    Cut squash in half lengthwise; scoop out seeds.
    Place with cut side down in a baking dish; add water.
    Cover and bake at 375\u00b0 for 20 to 30 minutes or until it is easily pierced with a fork. When cool enough to handle, scoop out squash, separating the strands with a fork.
