Family Favorite - Kale Soup - cooking recipe
Ingredients

1 lb. pork sausage
1 large onion, diced
1/2 red bell pepper, diced
3 qt. chicken stock
1 bunch kale, washed, stemmed and rough chopped
1/2 tsp. crushed dried red peppers
1 Tbsp. olive oil
4 garlic cloves, minced
salt and pepper to taste
5 bay leaves
2 large baking potatoes, peeled and diced
Preparation

Remove casing from sausage and saute over medium heat in the olive oil in a large stockpot.
Break up sausage into small pieces.
When the sausage is cooked halfway, add the onion, garlic and red bell pepper.
Season with salt and pepper.
cook until the vegetables are translucent, then pour in the chicken stock.
Bring to a boil and add the bay leaves and kale.
Simmer for 30 minutes or until the kale becomes tender.
Stir in potatoes and crushed red peppers.
Simmer 45 minutes; discard the bay leaves. Re-season with salt and pepper to taste.
Serve nice and hot with crusty bread.
Serves 10 to 12.
