Creole Sole - cooking recipe

Ingredients
    1 green bell pepper, seeded and cut in strips
    1 rib celery, minced
    1/2 small onion, minced
    1 tsp. olive oil
    1 c. diced, fresh tomato
    1 small bay leaf
    1/2 tsp. minced fresh thyme
    pinch of ground cloves
    dash of Tabasco sauce
    salt and pepper as desired
    1/2 lb. sole, flounder or other whitefish fillets
Preparation
    Saute bell pepper, celery and onion in olive oil until tender, but not brown.
    Stir in fresh tomato, bay leaf, thyme, cloves, Tabasco, salt and pepper.
    Simmer gently 5 to 10 minutes.
