Ingredients

1 large sweet onion
milk (to cover onion)
1 tsp. paprika
1 c. pancake mix
Preparation

Peel onion and cut into 1/4-inch slices.
Separate to form rings.
Place in bowl and cover with milk.
Let stand at least 15 minutes.
Drain, keeping 3/4 cup of the milk.
Place pancake mix, paprika and milk (3/4 cup) into bowl.
Beat with rotary beater for 2 minutes.
Dip onion rings into batter; drain.
Fry in hot deep fat (375\u00b0) for 2 to 3 minutes.
Drain on paper towels.
If batter becomes too thick, add a little more milk.
