Mincemeat Shortcake - cooking recipe

Ingredients
    3 oz. butter
    6 oz. self-rising flour (or plain flour and baking powder)
    3 oz. sugar
    1/2 tsp. mixed spices
    mincemeat
    sugar
Preparation
    Rub butter into flour until it is like bread crumbs.
    Stir in sugar and spice.
    Press half of mixture into a 7-inch cake tin. Spread mincemeat sparingly over and cover remaining mixture of flour.
    Press down gently but firmly.
    Bake 30 minutes at 400\u00b0 until light brown.
    Sprinkle with sugar.
    Cut while still warm. Use hot or cold.
    Freezes well.
