Smothered Quail - cooking recipe

Ingredients
    4 ready to cook quail (1 1/2 lb.)
    1/4 c. butter or margarine
    1/2 c. sliced shallots
    1/4 c. cider vinegar
    1 Tbsp. sugar
    1/2 tsp. salt
Preparation
    Rinse quail well.
    Pat\tdry
    with paper towels.
    In hot butter, in large skillet,
    saute
    quail
    until nicely browned, about 10 minutes.
    Add
    shallots; cook, stirring occasionally, until tender, about 5
    minutes.
    Add
    vinegar, sugar and salt, mixing
    well.
    Bring to
    boiling.\tReduce\theat
    and
    simmer, tightly covered, 20 to 30
    minutes\tor until quail are tender. Serve quail with pan juices spooned over.
