Black-Eyed Peas And Cornmeal Dumplings - cooking recipe
Ingredients

family size amount dried, fresh or frozen black-eyed peas
1/2 c. sifted flour
1 tsp. baking powder
1/2 tsp. salt
3/4 c. cornmeal
1 Tbsp. chopped parsley (optional)
1 egg
1/2 c. milk
1 Tbsp. shortening, melted
Preparation
-
Cook peas in a large pot with water and pork seasonings until tender and good tasting.
When done, add, if necessary, enough boiling water to bring liquid 1/2 inch above level of peas.
Have them boiling to receive dumplings as follows:
Sift flour, salt and baking powder together in a bowl.
Blend in cornmeal and parsley.
