Low-Fat Bran Muffins - cooking recipe

Ingredients
    1 c. flour
    2 tsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp. cinnamon
    2 c. bran cereal
    1 1/4 c. skim milk
    3/4 c. brown sugar
    1 egg white
    1/2 c. applesauce (unsweetened)
Preparation
    Mix flour, baking powder, baking soda and cinnamon in bowl. Mix cereal, milk and sugar; let stand 5 minutes.
    Stir egg whites into applesauce.
    Add to flour; stir just until moist.
    Spoon into muffin pan sprayed with no stick cooking spray.
    Bake 18 to 20 minutes.
    Makes 12.
