Red Beans And Rice - cooking recipe
Ingredients

2 lb. dried beans
1 bunch parsley, chopped
2 c. chopped yellow onions
1 bunch green onions, chopped
4 cloves garlic, chopped
2 c. ham (chopped) hambone
3 qt. cold water
Preparation

Soak beans overnight.
Drain.
Put beans in an 8 to 10-quart pot.
Add enough cold water to cover the beans.
Add onion and garlic and bring to a boil.
Cook 1 hour, then add all the other things and more (hot) water if necessary.
Simmer for 2 hours or until beans are soft.
Remove 2 cups of beans without juice and mash very good.
Return to pot and stir.
Add more water if you like lots of juice.
Always use hot water to add.
Serve over rice.
