Chicken Cacciatore - cooking recipe
Ingredients

3 to 4 chicken breasts, split and skinned
1/2 c. vegetable oil
1 c. finely chopped onion
1 c. finely chopped celery
1 clove garlic, finely chopped
1 (4 oz.) can mushrooms
1 (16 oz.) can tomatoes, chopped with juice
1 small can tomato paste
1 Tbsp. sugar
1 1/2 tsp. salt
1/8 tsp. pepper
1/2 c. cooking sherry
1 c. water
Preparation

Brown chicken in oil.
Remove from pan.
Saute onion, celery and garlic in same oil very slowly for 15 minutes.
Do not allow to brown.
Return chicken to pan and add remaining ingredients. Cook over low heat until chicken is tender, about 45 minutes. Serve over freshly cooked mostaccioli.
