Ingredients

1 c. shortening
2 c. sugar
4 eggs, one at a time
3 c. flour
2 tsp. baking powder
1 c. coconut milk
1 c. shredded coconut
1 tsp. vanilla
Preparation

Cream shortening and sugar.
Add eggs, one at a time.
Sift flour and baking powder.
Add alternately with sifted flour the coconut milk, shredded coconut and vanilla.
Bake in two 9-inch pans or a 9 x 13-inch pan at 350\u00b0 for 35 to 45 minutes.
Plain milk
may be used if coconut milk is not available.
