Idaho Scallopini - cooking recipe
Ingredients

2 1/2 lb. Idaho potatoes
3 Tbsp. flour
1/4 c. butter
1/2 lb. mushrooms, sliced
salt, pepper and chopped parsley
Italian herbs
1 (14 oz.) can chicken broth
1/2 c. Parmesan cheese
4 Tbsp. sherry (optional)
Preparation

Heat oven to 375\u00b0.
Peel potatoes and slice thin.
Toss with flour.
Alternate layers of potatoes and mushrooms in well buttered baking dish, sprinkling each layer with seasonings.
Pour in broth mixed with wine.
Cover and bake 45 minutes.
Uncover. Sprinkle with cheese and continue baking another 30 minutes. Serves 6.
