Lemony New Potatoes - cooking recipe
Ingredients

8 to 12 new potatoes
2 Tbsp. butter
1 Tbsp. lemon juice
2 tsp. snipped chives
1/2 tsp. salt
Preparation

In large saucepot heat 1 inch water to boiling.
Add potatoes. Cover and cook until tender, about 15 to 20 minutes.
When potatoes are done, turn off stove top.
Pour potatoes into colander to drain.
Pour potatoes into serving dish and cover with foil.
Place butter, lemon juice, chives and salt in skillet on stove top.
Just prior to serving, turn on heat and stir with mixing spoon until butter has melted.
Remove foil from potatoes, pour lemon butter over potatoes to coat.
Serve immediately.
Yields 4 servings.
