Ingredients

1 c. butter
1 c. granulated sugar
2 eggs
3 c. all purpose flour, sift before measuring
1 tsp. baking soda
6 oz. can lemonade concentrate, thawed and divided
2 tsp. finely grated lemon peel, optional
granulated or coarse sugar
Preparation

Cream butter and sugar, add eggs and beat until light and fluffy.
Sift together flour and soda; add to creamed mixture, alternating with 1/2 cup lemonade concentrate.
Stir in lemon peel.
Drop by teaspoonfuls.
Bake at 400 degrees for 8 minutes or until lightly browned around the edges.
Brush hot cookies with remaining lemonade concentrate the sprinkle with a little granulated sugar. Or, chill the dough, make balls and roll in coarse sugar, bake and glaze with concentrate.
Makes 3 to 4 dozen cookies.
