Quick Chicken Saute - cooking recipe
Ingredients

4 boneless, skinless chicken breasts or thighs
seasoned flour
margarine or oil
1 onion, sliced thin
1 clove garlic, minced
1 red pepper, cored, seeded and sliced thin
3 carrots, peeled and sliced lengthwise
2 zucchini, sliced lengthwise
1/4 c. white wine or sweet or dry sherry
1/2 tsp. basil
1/2 tsp. marjoram
1/2 tsp. thyme
salt and pepper or seasoned salt
Preparation

Dredge chicken pieces in seasoned flour, shaking off excess. In skillet, heat fat.
Saute chicken, turning once, until cooked through, about 10 minutes.
Remove from pan and keep warm.
Add more fat to pan if necessary, then add onion and garlic.
Add pepper and saute a few minutes.
Add carrots, sauteing a few minutes, then zucchini, until each is tender.
Return chicken to pan.
Sprinkle on herbs, salt and pepper; add wine and cover, sauteing for several more minutes until chicken is hot and ingredients are blended.
A light gravy should result; add more liquid if necessary.
Delicious with pasta or rice.
