Chinese Rice - cooking recipe

Ingredients
    3 Tbsp. oil
    1 c. rice
    1/4 c. onion, chopped
    1/4 c. celery, chopped
    4 Tbsp. soy sauce
    1/2 c. pine nuts or almonds
    2 c. chicken broth
Preparation
    Heat oil in heavy skillet.
    Add rice and stir until golden. Add onions, green pepper and celery.
    When vegetables are limp, add soy sauce.
    Add chicken stock and nuts.
    Cover and cook until rice is fluffy and the moisture is absorbed or this can be baked in a 350\u00b0 oven for 45 minutes.
    This freezes well.
    Serves 4.
