Date Pinwheel Cookies - cooking recipe

Ingredients
    1 lb chopped dates
    2 c granulated sugar, divided
    1 c water
    1 c shortening
    1 c brown sugar
    3 eggs, beaten
    4 c flour
    1 tsp baking soda
    1 tsp vanilla
Preparation
    Combine dates, 1 cup granulated sugar and 1 c water.
    Cook until thick.
    Set aside to cool.
    Mix together shortening, 1 cup granulated sugar, brown sugar and 3 eggs.
    In another bowl, mix flour and baking soda.
    Add this to sugar, brown sugar and eggs mixture.
    Pour in vanilla.
    Divide into balls and roll each one out.
    Spread the date mixture over rolled out balls.
    Roll each one up in a jelly roll.
    Slice and bake at 350 for 15 minutes.
