Lemon Muffins - cooking recipe
Ingredients

1 3/4 c. flour
1 tsp. baking powder
3/4 tsp. baking soda
1/4 tsp. salt
3/4 c. sugar
1 Tbsp. grated lemon rind
1 egg, beaten
8 oz. lemon yogurt
1/4 c. plus 2 Tbsp. butter, melted
1 Tbsp. lemon juice
Glaze (recipe follows)
Preparation

Combine first 6 ingredients in a large bowl; make a well in center of mixture and set aside.
Combine egg, yogurt, butter and lemon juice; stir well.
Add to dry ingredients; stir until just moistened.
Spoon batter into greased muffin pans, filling 3/4 full.
Bake at 400\u00b0 for 20 minutes or until lightly browned.
Cool in pans for 5 minutes.
Remove from pans and, while warm, prick tops with a toothpick; pour glaze over muffins.
Yield: 16 muffins.
