Riscotto Pancakes - cooking recipe

Ingredients
    1 Tbsp. butter
    1 medium onion, finely chopped
    1 garlic clove, minced
    2 c. chicken broth
    1 c. long grain rice (not converted)
    1/4 tsp. salt
    1/2 c. grated Parmesan cheese
    1 egg, slightly beaten
    1/2 c. dry bread crumbs
    1/3 c. oil (for frying)
Preparation
    Saute onion and garlic in melted butter over medium heat until tender.
    Pour in broth and heat to boil.
    Add rice and salt. Cover and simmer for 20 minutes.
    Remove from heat; add Parmesan and cool 20 minutes.
    Add egg.
    Mix well.
