Green Tomato Relish - cooking recipe
Ingredients

1 peck green tomatoes (1/4 bushel)
1/2 peck onions (red preferred)
8 hot red peppers
3 handsful of salt
1 qt. vinegar
1 pkg. whole mustard seed
3 tsp. cloves (whole)
6 tsp. cinnamon
1 tsp. ginger
8 c. sugar
Preparation

Grind green tomatoes, onions and red peppers the night before and add salt.
Let stand overnight.
Drain and cover with vinegar. In cheesecloth, put mustard seed, cloves, cinnamon and ginger.
Add sugar and bring to boil.
Simmer 20 to 30 minutes.
Stir occasionally.
Seal in jars.
Makes 10 to 12 pints.
