Chickpea Salad - cooking recipe
Ingredients

2 (15 1/2 oz.) cans chickpeas, drained
2 to 3 ribs celery, sliced
1/2 tsp. salt
2 Tbsp. olive oil
1/4 tsp. tarragon or basil
1 small red onion, minced
1 c. chopped parsley
pepper
1 Tbsp. cider vinegar
Preparation

Steam vegetables in a little water for 5 minutes.
Toss with chickpeas.
Mix olive oil and vinegar with salt, pepper and herbs. Chill.
Serve on a bed of lettuce.
Serves 5 to 6.
