Cheese Cake Muffins - cooking recipe

Ingredients
    vanilla wafers
    2 (8 oz.) pkg. cream cheese, softened
    2 eggs
    3/4 c. sugar
    1 Tbsp. lemon juice
    1 tsp. vanilla
Preparation
    Place 1 vanilla wafer in the bottom of a muffin liner and add mixture of remaining ingredients.
    Bake for 35 minutes at 325\u00b0. Can be frozen for future use.
    When ready to serve, top with your favorite pie filling.
    Makes approximately 18.
