Ingredients

2 eggs, separated
1/4 tsp. salt
1 c. all-purpose flour
1 Tbsp. margarine
1 1/4 c. water
1 Tbsp. sugar
1/2 c. heavy cream, whipped
Preparation

In a medium bowl, beat egg yolks, water, salt, sugar and flour until well blended. Fold in whipped cream. Beat egg whites until stiff.
Fold into batter.
Rub a crepe pan or small skillet lightly with margarine. Add 3 to 4 tablespoons batter.
Tip pan and let batter spread over bottom. Cook over medium heat just until bubbles appear on surface. Turn and cook until browned. Serve with pureed fruit, if desired.
Makes 4 servings.
