Cinnamon Carrot Cake - cooking recipe
Ingredients

3 carrots (1 1/2 c. cooked)
3 c. all-purpose flour
2 3/4 c. sugar
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1 1/3 c. oil
6 eggs
1 (8 oz.) can crushed pineapple, drained
1 tsp. vanilla
1 c. chopped pecans
1/2 c. flaked coconut
Preparation

Peel and slice carrots. Cook abut 20 minutes until tender. Mash carrots with potato masher. Grease and flour three 9-inch pans. Set aside.
