Caribbean Chicken - cooking recipe
Ingredients

1 Tbsp. oil
1 lb. chicken, chopped
1 large onion, chopped
2 Tbsp. soy sauce
1/4 c. water
1 clove garlic
2 tsp. curry or more
1 Tbsp. parsley
2 large tomatoes, chopped
Preparation

Heat oil in skillet.
Brown chicken. Reduce heat to low.
Add remaining ingredients; mix well.
Simmer, covered, for 1 hour, stirring and adding water as necessary. Serve over rice.
